又称玉蜀黍淀粉。俗名六谷粉。白色微带淡黄色的粉末。将玉米用0.3%亚硫酸浸渍后,通过破碎、过筛、沉淀、干燥、磨细等工序而制成。普通产品中含有少量脂肪和蛋白质等。吸湿性强,最高能达30%以上。目前淀粉工业发展很快,以玉米淀粉为原料的加工产品有100多种,被广泛用于食品、医药、化工、纺织、造纸等工业。在医药工业中,玉米淀粉是制作葡萄糖的重要原料,还是生产青霉素、链霉素等多种抗菌素培养基的主要成分,也是一些片状药物的添加剂;在化工工业中,玉米淀粉用于生产醋酸、丙酮、丁醇等化工产品;在纺织和造纸工业中,主要用高直链淀粉玉米的淀粉作上浆剂和产品表面的涂料。在生活中我们主要用它来码味上浆,是将加工成片、条、丝、丁等形状的小件原料,加入精盐、料酒、鸡精、淀粉、姜片、葱段(有的加入葱姜水)和蛋液一起抓匀(有的还需搅拌上劲),使每块(条)原料均匀粘裹上一层薄薄的浆液,主要用于滑炒、滑熘、糟熘、醋熘、氽、爆等技法成菜的烹制前调味法。这种方法适用于质地细嫩,或者是选择细嫩部位的鸡、鸭、鹅“三禽”和猪、牛、羊“三畜”,以及鱼、虾、蟹等海河鲜原料。码味上浆具有使原料除异增香,菜品有底味,保持口感细嫩鲜脆的作用。【营养分析】1.玉米是世界公认的“黄金作物”,其脂肪、磷元素、维生素B2的含量居谷类食物之首;2.玉米面中含有亚油酸和维生素E,能使人体内胆固醇水平降低,从而减少动脉硬化的发生;3.玉米面中含钙、铁质较多,可防止高血压、冠心病;4.现代医学研究表明,玉米面中有丰富的谷胱甘肽,这是一种抗癌因子,在人体内能与多种外来的化学致癌物质相结合,使其失去毒性,然后通过消化道排出体外。粗磨的玉米面中含有大量的赖氨酸,可抑制肿瘤生长;5.玉米面还含有微量元素硒,硒能加速人体内氧化物分解,抑制恶性肿瘤;6.玉米面中丰富的膳食纤维,能促进肠蠕动,缩短食物通过消化道的时间,减少有毒物质的吸收和致癌物质对结肠的刺激,因而可减少结肠癌的发生。

1.新型药用辅料,用作增稠剂、稳定剂、填充剂、无糖药物赋形剂等用于水产、食品、石油等行业药用辅料,是糊精、麦芽糖、葡萄糖的主要原料用作药物赋形剂以及食品增稠剂、稳定剂、填充剂等
